Garlic Extract & Black (Fermented) Garlic

Extracts like these are often standardized to a specific reference value, so the composition stays comparable from batch to batch.
Black garlic is something fundamentally different. It isn't chemically extracted but instead aged over several weeks under controlled heat and humidity – an enzymatic ripening process commonly referred to as fermentation. During this process, the color turns deep black, the texture becomes soft, and the flavor shifts from sharp to mildly sweet, with notes reminiscent of balsamic vinegar or dried plums. S-allyl cysteine (SAC), on the other hand, is a water-soluble, considerably more stable sulfur compound that forms mainly during the long aging process – making it characteristic of black and aged garlic. SAC is low-odor and considered easy to standardize, since it behaves more stably than allicin. That's why products made from black garlic usually state their active-compound content via SAC, while classic fresh or dry extracts tend to reference allicin potential instead.
For odor, this means: aging and processing methods that reduce allicin formation lead to lower-odor products. But low odor doesn't automatically mean "better" or "weaker" – first and foremost, it's a statement about the compound profile and the processing method. Good labels state a concrete reference value – for classic extract, that's the allicin potential or alliin content; for black garlic, it's the SAC content, usually per daily serving. If there's no amount stated at all, and the label just says "high-dose" or "strong," the product is hardly comparable. Also check whether the stated value clearly refers to the daily serving and not to 100 grams of raw material, which produces bigger-looking numbers without there actually being more in the product.
Fermentation quality for black garlic. Since aging takes weeks and temperature and humidity have to be carefully controlled throughout, transparency here is a sign of quality. Information on aging duration, the origin of the raw garlic, and a stated SAC value all point to a controlled process. Fully aged, evenly deep-black garlic with a soft, non-dried-out texture is a good sign.
Low-odor forms. If you want to avoid the intense aftertaste, odorless capsules or black garlic are an option. It's important to understand that low odor is simply a result of processing – it doesn't replace a stated active-compound value.
Extract ratio. For extracts, the herb-to-extract ratio (e.g., 10:1) indicates how much starting material is mathematically contained in one unit. This figure is only meaningful if a reference value is also given, since a high ratio alone says nothing about the actual composition.
Purity and lab testing. Look for information on purity, ideally with no unnecessary additives, fillers, or anti-caking agents, as well as independent lab analysis (for example, for heavy metals and microbiological purity).
