What Exactly Is Matcha?
Matcha is a finely ground powder made from the green leaves of the Camellia sinensis plant – the same plant that produces classic green and black tea. The crucial difference lies in cultivation and processing. A few weeks before harvest, the tea plants are shaded, usually with nets or mats. This shading slows down photosynthesis and changes the composition of the leaves: they produce more chlorophyll and certain amino acids, which accounts for the intense colour and the characteristic mild, umami flavour.
After harvesting, the leaves are steamed, dried, stripped of stems and veins, and finally processed into tencha. This raw material is traditionally stone-ground, very slowly, into a fine powder. Caffeine
Matcha contains caffeine – the same substance found in coffee, black tea or cola. L-Theanine
L-theanine is an amino acid that occurs in meaningful amounts almost exclusively in tea plants, and is comparatively abundant in shaded green tea such as matcha. It contributes to the mild, umami flavour. L-theanine is often mentioned in connection with matcha; however, for claims that go beyond a plain description of the compound, there are no EU-approved health claims. We therefore keep this deliberately descriptive: L-theanine is a characteristic constituent – legally speaking, nothing more can be claimed.
Catechins and Other Plant Compounds
Green tea contains secondary plant compounds from the catechin group, including EGCG (epigallocatechin gallate). These compounds are the subject of numerous studies. Because the whole leaf is consumed with matcha, the amount you take in tends to be higher than with a steeped infusion. The ground leaf also supplies chlorophyll, which is responsible for the colour, along with small amounts of minerals. Because matcha provides meaningful amounts of caffeine, however, it isn't a drink to reach for in just any situation.
Caution is advisable for pregnant and breastfeeding women, people who are sensitive to caffeine, children, and anyone who struggles to fall asleep in the evening. If you take medication or have pre-existing health conditions, it's also worth checking your caffeine intake with a doctor if in doubt. Preparing Matcha: How to Get It Right Every Day
The classic preparation method is simple, but takes a bit of feel. The usual amount is 1 to 2 grams of powder per cup, which is roughly half to a full bamboo scoop (chashaku), or just under a teaspoon. Water temperature matters: not boiling hot, but around 70 to 80 degrees Celsius. Water that's too hot quickly turns matcha bitter. The powder is poured over with a small amount of water and whisked briskly with a bamboo whisk (chasen) in quick W or M-shaped strokes until a fine, even layer of froth forms.
For everyday use, matcha also works well as a latte with frothed milk or a plant-based drink, cold as an iced matcha, or stirred into yoghurt and smoothies. Colour: High-quality matcha is an intense, vivid green. A brownish or yellowish tinge points to inferior leaves, stem content or ageing. Origin: Traditional growing regions are in Japan, such as Uji, Nishio or Kagoshima; a transparent statement of origin is a good sign. Texture: Stone-ground matcha is extremely fine, almost like icing sugar, and doesn't feel grainy. Packaging: Good matcha comes protected from light and airtight, often in tins or sealed pouches.
